Starters

Inaugural lunch with my muse





Nervous start to the project, confusion over the menu which didn't mention egg and chips! But soon sat down to double egg and chips, with bread and butter. Liz was amazed that buttered bread was sandwiched together thus avoiding buttery mishaps on the plate. It's this kind of intuitive simple logic that we are looking for.

Over lunch conversation turned to The Gift: Imagination and the erotic life of property by Lewis Hyde 1983 a life changing book for the muse, a must read for anybody interested in anything.




Anyway plates cleared and all for £10 it was agreed that the purpose of this project was to have a nice lunch at little or no cost to us all.

We now await with keen interest the completion of the giant egg which is due any day now.

Are you being served

"Egg and chips four times and a pot of tea."











Pre-heat the oven to 245C/475F/gas mark 9. Break the egg and carefully separate the white from the yolk, making sure to keep the yolk whole. Put the knob of butter and a soupspoon of water into the frying pan and heat until foaming (the water helps to stop the butter from getting too hot, which is why the whites brown and toughen). Salt and pepper the pan so that the underside of the white gets seasoned, too. When the butter begins to foam, carefully slide in the white.

Put in the oven and cook for a minute and a half. The top should still be trembling. Now season on top - seasoning the white like this means you won't tarnish the yolk's wonderful golden colour by speckling it with pepper. Put the raw yolk in the centre of the white, and return to the oven for two minutes. Dot with a few drops of balsamic vinegar, and serve.

The Plan



Taking my inspiration from Liz Scrine large fried egg installation coming soon to Salford I am planning a series of lunches in and around Manchester where I can eat egg and chips. My guest will chose the venue which must have e+c on the menu and hopefully bread and butter.
